Hot Pepper Soup (with Xi'an and Henan versions), particularly suitable for low-calorie meals
The beautiful and delicious foods across China are countless, and almost every place has its own characteristic snacks. When traveling or on business trips, you always want to try the local specialties. Some snacks are low in calories and are very suitable for weight loss, such as Guizhou's Silk Doll, Northeast's Big Mix Cabbage, and Henan (Xi'an)'s Hot Pepper Soup.

Hot Pepper Soup is famous in Henan, but after eating it once during a business trip to Xi'an, I found the flavor very rich and delicious. Compared to Henan Hot Pepper Soup, the ingredients used in Xi'an are richer, and the proportion of vegetables is larger, including beef meatballs, potatoes, lotus root, and zucchini. The ingredients are diverse and nutritious, without using high-fat and high-oil ingredients, making it a high-protein, low-fat snack suitable for weight loss.
However, it's difficult to control the portion size of ingredients when buying food outside, so today I'd like to share a modified version of Hot Pepper Soup with you to satisfy your cravings during weight loss.
Ingredients: 250g beef, 100g zucchini, 100g cabbage, 100g potatoes, 80g beans, 80g lotus root, 20g cornstarch
Seasoning: (liao jiu – rice wine), salt, oyster sauce, soy sauce, white pepper, Veggie Fresh ( – vegetable broth), oil ( – sesame oil)

First, let's make the beef meatballs.
1Clean the beef, chop it into a fine paste, add (jiang mian yang – soy sauce), (liao jiu – rice wine), oyster sauce, salt, white pepper, and cornstarch, and stir in one direction until it becomes elastic;
2Boil water in a pot, put the meat paste into the boiling water, cook for about 3 minutes;

3After cooking, take out the beef meatballs;

The beef meatballs can be made in batches, and they are especially suitable for weight loss. Make them and divide them into 5-6 portions in the refrigerator for easy use;
4Wash and process the ingredients: cut the potatoes into diced, the beans into segments, the cabbage into small pieces, the zucchini into diced, and the lotus root into shredded pieces;

5Add water to the pot, first add the potatoes and beans and cook for about 2 minutes;

6Add the cabbage, meatballs, and zucchini and cook for about 3 minutes;

7Add the lotus root and cook for about 1 minute;
8Add soy sauce, salt, and pepper, thicken with cornstarch slurry, turn off the heat and drizzle with a little sesame oil, and it's done.
