Yellow Braised Rice with Chicken

Ingredients: 1 Chicken leg, 1 Potato, 5 Dried Shiitake Mushrooms, 1 Green Pepper, 1/3 of Green Bamboo Shoots, 1 Bunch of Chinese Spinach, 300g Enoki Mushrooms, 3 Slices of Ginger, 5 Dried Red Chili Peppers, Green Onion, Small Segment

Seasonings: 1 Spoon of Old Soy Sauce, 2 Spoons of Light Soy Sauce, 1 Spoon of Oyster Sauce, 1 Spoon of Liquor, 1 Leaf of Dried Bay Leaf, 1 Bay Leaf

Steps:

1. Dry shiitake mushrooms, wash clean, then add water and soak for 10-15 minutes, for use

2. Green bamboo shoots, wash clean, cut into small pieces

3. Potatoes, peel, wash, and cut into small pieces

4. Green peppers, wash clean, cut into chunks

5. Enoki mushrooms, tear open, wash clean

6. Chinese spinach, tear open, wash clean

7. Green onions, wash clean, cut into segments, ginger, cut into slices, dried red chili peppers, cut into small segments

8. Chicken pieces added to water, then add some green onions, ginger, bring to a boil and cook for 5 minutes, then remove and drain dry for use

9. Heat up the pot with oil, add the cut dried red chili peppers, green onions, ginger, and bay leaf, stir-fry until fragrant

10. Start adding the cooked chicken pieces, stir-fry for 2 minutes, then add light soy sauce, old soy sauce, liquor and sugar, and stir-fry together

11. Add potatoes, shiitake mushrooms, add water, the water must completely submerge the chicken pieces and potatoes, cover the pot and cook for 10-15 minutes, until the potatoes are soft

12. Add enoki mushrooms, add salt, cover the pot, cook for 5 minutes, then add old soy sauce and oyster sauce for coloring, add salt

13. Add green bamboo shoots, green peppers, cook for a while

14. Finally add Chinese spinach, stir evenly

15. Finally pour into prepared rice.



Notes:

1-The amount of water must submerge the chicken pieces and potatoes
2-When cooking chicken pieces and potatoes, cover the pot. Green peppers, green bamboo shoots, Chinese spinach should not cover the pot
3-Green peppers, green bamboo shoots, Chinese spinach should not cook for too long, otherwise the color will be dark
4-Cooked dishes can be added with oyster sauce to color
