Mango Yogurt Mille Crepes Cake



Ingredients:

Eggs 3


Low-gluten flour 150g


Milk 380g

Coconut oil 15g


Mango 2 catties

Yogurt 400g (2-3 cups)

Crushed Whole Wheat Biscuits 100g


Instructions:

I. Process Mango

1 Wash the mangoes thoroughly and carefully peel them. It is best to use a small mango peeler, and the mangoes should be fully ripe. A little wrinkled skin is fine, because that's where the most sweetness and healthiness come from




2 Carefully take out two pieces of flesh, and there will be a mango pit in the middle. Don't throw it away, you can eat it directly~

II. Process Cake Shells

1 Beat 3 eggs, add 380g of milk and stir well, then add melted coconut oil and stir until no oil is visible. Sift in 150g of low-gluten flour and patiently mix until a smooth, lump-free batter is formed

2 Heat a flat pan over low heat. Scoop a spoonful of batter into it, turn it over with a spoon to make a circle, and the batter should solidify, turn brown, and have small bubbles when it's cooked. Take it out of the pan and let it cool on a sheet of oil paper

III. Process Filling

3 Add the mango pieces and spread them evenly


4 Repeat this process to make 10-12 layers. Stop when you are satisfied with the height



5 Place a flat plate on top, and refrigerate for at least 6 hours. Placing a plate provides a little weight, making the whole cake look more neat and beautiful. Refrigerating allows all the ingredients to stick together and makes the texture more delicious
