② Method of Making Noodles

1Rinse the pork belly and cut it into small pieces; 2Heat the pot on high heat, add salad oil and heat until hot, add the pork belly to sauté until the oil comes out, then add the spices (100g onion segments, 50g ginger slices, 6g cinnamon, 8 star anise, 4 cardamom pods), sauté until fragrant, then add chili powder and sauté for 3 minutes, then add Qishan vinegar (can be replaced with aged vinegar or fragrant vinegar), 50g salt, small fire simmer for 30-40 minutes, until the meat is tender and fragrant, and the broth is dry, then remove from heat.

⑤ Vegetable Souse Ingredients

Radishes, potatoes, tofu, green beans, yellow flowers, wood ear mushrooms, above vegetables cut into small pieces, blanch in water, then pass through cold water, stir with hot oil, and set aside.

⑥ Egg Skin Production

Mix eggs into egg liquid, pour into the pot and stir into a thin pancake, remove from pot and cool, cut into strips, then cut into small rhombus blocks, ready to use.
