Lushan Specialty Eel
Euis family, Caudalfish order, Yellow Eel genus. Also known as yellow eel, snakefish, loach eel.
The Caudalfish order includes about 15 species of slender eel-shaped fish. There are two species distributed in China, one of which is the common yellow eel, and the other is mountain yellow eel, which is currently only distributed in Yunnan Longchuan County. There are no other domestic distributions, and it is closely related to the Perciformes but not closely related to the Eeliformes. They live in tropical and brackish waters. The body length is about 20.70 cm (8.28 inches), without scales or with very small scales, the dorsal and anal fins are very low and continuous around the tail, and the gills are usually only one gill slit in the throat. Some species have very small gills and rely on breathing through the throat or intestinal mucosa. It is a valuable edible fish in the East and is often farmed in ponds or rice fields.
Yellow eel: Without scales, the front half of the body can stand upright in shallow water, and uses the mouth to breathe air into the water. It stores air in the mouth and throat, so the throat appears swollen. It is widely distributed in Southeast Asia, a common freshwater edible fish, except for the Northwest Plateau, it is produced in various places, living in ponds, small rivers, rice fields and other places, often lurking in mud holes or stone crevices. It comes out at night to forage. The reproductive situation is special, the young are female, after one reproduction, they turn into males, this phenomenon of female and male transformation is called sex reversal phenomenon.
