First, cook the peas until they are soft. I used water to cook them, originally, I should have used bone broth.
Once the peas are cooked to a soft texture, you can start the other operations, stir-fry the meat with Pixian Douban: Heat an appropriate amount of oil in a pan, cut the chicken breast (or pork belly or bacon) into meat, and stir-fry until browned.

Add an appropriate amount of Pixian Douban, stir-fry until red oil comes out.

Then add an appropriate amount of old vinegar, maltose syrup, and stir-fry until fragrant, then add some green onion and ginger, stir-fry until fragrant, and set aside.

In a bowl, mix the seasonings: a little chicken powder, appropriate soy sauce, chili oil (or chili powder), minced garlic, and a lot of red oil chili.
If you have cooked bone broth, add two spoonfuls of bone broth.

If you have pig fat, add some pig fat.
Boil water to cook the noodles until you like the texture.

Finally, if you have leafy vegetables, add two leaves, and blanch them for a moment, then turn off the heat.
Pour two spoonfuls of noodle soup into the bowl, stir until smooth, and add the noodles, leafy vegetables, and the stir-fried meat and peas, and sprinkle with some green onions. Pea noodles are ready!

The stir-fried meat and peas can be prepared in large quantities and stored in the refrigerator for next time to eat, just cook the noodles.
