Yu Guo Pian Pian
Yu is a characteristic traditional famous dish from Shandong Province's Zibo region. 'Yu' itself is straightforward, referring to fish cooked in a pot; '' is a local Zibo term, meaning a type of flatbread made primarily with corn flour. It's also called '' (bǐzi) in some places.

Scallions 4 segments, ginger 3 slices, garlic 4 cloves, dried chili peppers 6-7 (small), star anise 2, fennel seeds 10, cornstarch 2 tablespoons, sugar 2 teaspoons, salt 1/2 teaspoon, beer 400ml.

Corn flour 200g, soybean flour 60g, baking soda 2g.
Production Process
1Remove (or cut off) the heads of the small sea fish, pull out the internal organs, and clean them thoroughly, and set them aside.
2Slice the scallions, slice the ginger, smash the garlic, wash and chop the green onions into small segments (about 1cm long).
3Mix corn flour, soybean flour, and baking soda evenly, and while pouring in hot water, stir until a uniform, soft dough is formed.
4Heat an appropriate amount of oil in a flat pan until it's about 50% hot, add scallions, ginger, garlic, star anise, dried chili peppers, fennel seeds, and stir-fry until fragrant, then pour in cornstarch and sugar, and cook over low heat for a while to remove the raw flavor.
5Pour in beer and bring it to a boil over high heat, then add the fish.
6Maintain high heat, take a suitable amount of cornmeal dough in your hands and shape it into oval patties, rotate them around the edge of the pot, and the bottom should be submerged in the fish broth.
7Cover the pot with a lid and simmer over low heat for about 15 minutes, add salt, continue to cook over high heat until the broth thickens, the pancake bottom is golden brown, and finally, sprinkle in chopped green onions, and turn off the heat.
8Serve the entire pot together on the table.
