Clam Seaweed Tofu Soup
Instructions: 1. Soak clams in water with a spoonful of salt and a few drops of oil to excrete sand, then remove. 2. Wash and soak kelp in water, cut tofu into cubes. 3. Pour water into the pot with a little ginger slices, put the kelp in to boil for 10 minutes over low heat. 4. Put the tofu into the pot with the kelp and simmer for two or three minutes over low heat. 5. Put the clams into the pot, cook until they open, add salt and pepper to taste and sprinkle scallions to serve.
Meat Powder Yarn Noodles
Ingredients: 1 bundle of sweet potato noodles; 100g of pork with fat and lean meat; 1 tablespoon of Pixian Doubanjiang; 1 small piece of ginger; 3 scallions; 3 cloves of garlic; 1 tablespoon of soy sauce; 1/2 teaspoon of white sugar; 2 tablespoons of yellow wine; 3 tablespoons of peanut oil
Instructions: 1. Prepare the main materials, sweet potato noodles should be soaked for 6 hours. Chop ginger and garlic into minced; chop scallions into scallion greens; cut the pork into coarse dicing and then cut into meat mince. Heat up the wok and add oil, cook over low heat, after the oil temperature is up, pour in the meat mince, add yellow wine, shovel to scatter, dry the meat moisture and release oil. Push the meat to the edge of the pot, add Pixian Doubanjiang to fry fragrant and release red oil.
2. Then add minced ginger and garlic to fry fragrant. Scoop the meat mince down, stir-fry together. Add 200ml of water (fresh soup is better) to the pot, bring to a boil over medium heat. Add sweet potato noodles, add soy sauce and continue to cook over medium heat. GingerDuck Fillet
Ingredients: 200g duck fillet, 50g ginger slivers, 20g red chili slivers, 150g garlic sprouts, salt, cooking oil, soy sauce, oyster sauce, chicken broth
Instructions: 1. Heat oil to fry duck fillet, drain off the oil; 2. Then add a spoonful of oil in the pot, put ginger slivers and chili slivers into the pot to fry; 3. Add duck fillet and garlic sprouts to fry out aroma.
According to personal taste, add soy sauce, oyster sauce, chicken broth, salt and stir-fry evenly, then cook and serve.
