Steamed Pork Spare Ribs
Ingredients: 200g pork belly, 6 dried chilies, 3 slices of ginger, 2 spoonfuls of cornstarch, 20g doubanjiang, 1 spoonful of yellow wine, 5g salt
Method
1. Cut the pork belly into small cubes, and marinate with salt and yellow wine for a moment, then add cornstarch.
2. Chop the shiitake mushrooms and dried chilies into small cubes.
3. Heat oil in a pan over medium heat, and fry the shiitake mushrooms and pork belly until golden brown.
4. Add chili and ginger to the pan, then add doubanjiang and a little water.
5. Stir-fry evenly, add shiitake mushrooms and pork belly, and cook over high heat until evenly browned.
Lettuce with Shrimp
Ingredients: Lettuce, shrimp, chili, mushrooms
Method:
1. Wash the shrimp and marinate with a spoonful of and a little salt for ten minutes.
2. Cut the lettuce into slices, cut the chili into slices, and cut the mushrooms into slices.
3. Add oil to the wok until it's hot, then add the shrimp and stir-fry until they turn pink, then remove them.
4. Add minced garlic and stir-fry until fragrant, then add doubanjiang and a little water.
5. Add the lettuce, mushrooms, and shrimp, season with salt, and stir-fry briefly.
6. Add cornstarch to thicken the sauce before serving.
Large Plate Spicy Shrimp
Ingredients: Fresh shrimp, yellow melon, potato, garlic, ginger, chopped chili, red chili
Method:
1. Wash the shrimp and remove the shrimp spear and shrimp maw, then cut a knife mark on the back of each shrimp; slice the potato and yellow melon, slice the ginger and red chili.
2. Heat oil in a pot to 50% hot, then deep-fry the potato slices until slightly golden, then add garlic and yellow melon, fry a little, and remove.
3. Add the shrimp to the hot oil and fry until pink, then deep-fry again.
4. Remove the oil from the pot, and use a little to heat up the doubanjiang and chopped chili, until the fragrance is released.
5. Add the fried shrimp, a spoonful of sugar, a spoonful of, and half a bowl of high-quality broth and stir-fry until slightly simmering for three to four minutes.
