Lotus Root and Pig
Ingredients: Pig, Lotus Seeds, Shiitake Mushrooms, Sugar, Vegetable Oil, Salt, Ginger.
Soak the lotus seeds in clean water for about 2 hours, wash the shiitake mushrooms clean and soak them. Wash the pig clean and cut it open along the middle with a knife.
The front of the pig is easy to cut open, and the back has a large bone, which needs to be cut with force. Cut the cut pig into large pieces (or ask the vendor to cut it when buying).
Put a certain amount of water into the pot and pour into the pig pieces, boil over high heat for 5 minutes, then remove the pig pieces, cool them down, and wash them with clean water for reserve. Crush the sugar.

Cook over low heat for 30 minutes, then pour in the pre-soaked lotus seeds and continue to cook over low heat for 1 hour. Add a suitable amount of salt and cook for 5 minutes before turning off the heat.

Braised Tofu with Eggs
Ingredients: Soft Tofu, Braised Eggs, Green Onion, Cilantro, Red Pepper, Garlic, Salt, Chicken Broth, Vegetable Oil (optional).
Prepare all the ingredients. Cut small openings in the four corners of the bottom of the soft tofu box.
Remove the packaging film of the boxed tofu and flip it over to a flat plate, gently remove the tofu box.
Peel and cut the braised eggs into small pieces. Chop the green onion and cilantro finely. Cut the red pepper into small circles. Chop the garlic into minced garlic. Place the tofu on salt and marinate for 5 minutes before draining the soup, then sprinkle with chopped green onion, cilantro, red pepper circles and minced garlic.
Sprinkle braised egg pieces on the tofu, add chicken broth to season, drizzle with vegetable oil, and serve. (You can also add chili oil if you like).

Stir-Fried Scallion and Bitter Gourd
Ingredients: Bitter Gourd, Garlic, Red Pepper, Vermicelli Noodles, Salt, Chicken Broth, Vegetable Oil.
Wash the bitter gourd, peel it, and cut it into uniform segments. Use a melon ball scoop to hollow out the bitter gourd segments.
Wash the vermicelli noodles and soak them in water for 5 minutes. Chop the garlic into minced garlic. Heat the oil, sauté the garlic until fragrant, add salt and chicken broth to season.
Place the bitter gourd segments on the vermicelli noodles. Fill the hollows in the bitter gourd segments with the sautéed minced garlic. Pour water into the pot and bring it to a boil. Place the bitter gourd segments in a steamer and steam for about 5 minutes.
Blanch the red pepper in oil, pour it on the steamed bitter gourd.

Spicy Chili Peppers
Ingredients: Chili Peppers, Garlic, Salt, Oyster Sauce, Sugar, Vinegar, Chicken Broth, Vegetable Oil.
Wash the chili peppers, remove the stems and seeds, and cut them into segments. Chop the garlic into minced garlic. Mix oyster sauce with water, add salt, a little sugar, vinegar, and chicken broth to make the sauce.
Do not add oil to the pot, dry-fry the chili peppers until the skin turns green and slightly charred, then remove them.
Add a little oil to the pot, sauté the minced garlic until fragrant. Add the fried chili peppers and stir-fry.
Add the sauce to season and stir-fry evenly. Turn off the heat and serve.
