It is said that Hubei people received the rapeseed greens, but they don't know how to eat them.
As a Chongqing resident, I've been eating rapeseed greens every winter. There are many ways to eat them, so let's share the simplest one with our Hubei friends!

Rapeseed greens are called 'er cai' because of these small clumps – they are its 'sons'. You need to break them apart one by one when cooking.

The most common way to cook it is stir-frying. We usually cut it into slices when stir-frying.

The steps are similar to stir-frying green vegetables. Chongqing people often add a few dried chilies to stir-fry, which gives the dish a spicy flavor.
If you're worried about your cooking skills, you can also use seasonings like chili bean paste and Lao Gan Ma (fermented chili paste) to cook the rapeseed greens.

Rapeseed greens can also be boiled. Cut them into chunks and boil with a little salt.

The soup made with rapeseed greens can be a bit bland, so you should make a dipping sauce. My dipping sauce includes salt, MSG, chicken broth powder, chili oil, soy sauce, and flower and chili oil. Dip the rapeseed greens into the sauce when eating.

Rapeseed greens can also be used to cook rice porridge.

Rapeseed greens have a bitter taste, even many Chongqing people don't like it, but I do. I love the bitterness of rapeseed greens with a slight sweetness.
