Braised Chicken Wings, this dish is a home-style dish with chicken wings as the main ingredient. The flavor is savory and delicious. Ingredients: chicken wing middle, scallions, sugar, ginger, garlic, salt, soy sauce, cooking wine, chicken powder.
Steps of making:
- Step 1, wash the chicken wings, and marinate with seasonings (scallions, ginger, cooking wine, salt, pepper) , use a fork or toothpick to prick small holes in the chicken wings, making them easier to absorb the flavor.
- Step 2, heat a wok and pour in salad oil, after heating, pour in sugar and stir-fry until caramel color is formed, just change color, do not burn, otherwise it will be bitter, pour out the caramel color for use;
- Step 3, heat oil in a separate pan and add the chicken wings, sear for a moment, add scallion ginger garlic slices, star anise, bay leaf, a few dried chili peppers; soy sauce, scallion ginger, stir-fry evenly, add warm water to cover the chicken wings.
- Step 4, after boiling, add appropriate amount of cooking wine, drip a few drops of lemon juice, continue to cook. 5 to 10 minutes before taking out of pot add salt. After the chicken wings are cooked, close the pot to reduce the sauce. You can add a little chicken powder, or not. Put out, plate and serve.

Notes:
1, if you don't have sugar, you can use white sugar, sugar can better color, at the same time, the surface of the finished product will be shiny and have a luster.
2, when frying sugar, do not fry too much.
3, when cooking, especially meat, salt should be added at the end, to prevent protein from early coagulation, making the meat tough.
