This dish is simply delicious, with flowing egg yolks and fatty but not greasy meat patties, and the meat patties are also disregarded.

Today I chatted with my office colleagues, saying that it's not appropriate to lose weight during special times, because reducing protein intake would lower immunity. Eat what you should eat, sleep when you should sleep. It's as if we always refuse to eat or sleep just to lose weight.

However, to be honest, all the things we consider delicious are so unhealthy. I asked my colleagues, what would you most want to eat if you didn't consider weight management? Some said cream cheese cake, some said beef, some said hot pot, and some said Xiao Long Bao. Basically, they were all high-calorie foods.

Just now, I'm going to introduce another dish that my family members really love, but it's a bit sinful. This dish is very high in fat and calories. In fact, the high fat and calories of this dish come from a lot of salted egg yolks. In the meatball, I added carrots and shiitake mushrooms, and mainly used lean meat. There are 8 golden-yellow salted egg yolks in one dish, which is really drooling! Just like the meal boxes people bring, some bring pickled cabbage and fermented tofu, but one day a friend bought a box of salted duck eggs, and no one refused. Why do they love eating it? Just because they can poke a hole in the golden-yellow salted egg yolk and let the oil drip out?

Mr. Wang Zengqi wrote in 'Duck Eggs on the Mid-Autumn Festival' that 'I've moved around a lot, and eaten a lot of duck eggs, but they are not as good as those from my hometown! I used to eat salted duck eggs from afar, and I didn't think they were good. High-county salted duck eggs are characterized by fine texture and a lot of oil. The protein is tender and juicy, unlike others that become dry and powdery. When eaten, it's like chewing on stone powder. A lot of oil is also unrivaled. Normally, it's mostly eaten by cracking open the 'head' and scooping out the yolk with a chopstick. When you poke the chopsticks into the yolk, 'shhh'—the red oil comes out. High-county salted duck eggs are all a deep red color. There is a famous dish in the north of China called 'Crimson Tofu', which is made with High-county salted duck eggs.

If the eggs in this dish are ordinary eggs, I can only beat two eggs into it. The protagonist of this meatball steamed egg is the meatball, and the flavor is delicious if it's seasoned well. But if you replace the eggs with salted egg yolks, it will take over immediately. Everyone's first chopsticks will definitely point to the yolk. There are 8 salted egg yolks in one dish, and I threw away 7 salted egg whites to save some. I really feel sorry for them.

Main ingredients: 300g pork, 8 salted egg yolks, 4 shiitake mushrooms, 1/2 carrot

Accessories: 20g oyster sauce, 15g cooking wine, 1 scallion

Method: Step 1, I like pork with a little lean meat. Cut the shiitake mushrooms and carrots into the meatball, which makes the meatball more crispy and flavorful. Select fresh salted eggs. Step 2, clean the pork leg meat, cut it into small pieces, and put it into the meat grinder for 15 seconds

Step 3, it turns into meat mince

Step 4, drizzle the carrot slices into the meat grinder, and the shiitake mushrooms are also ground into mince. Within a minute, all the ingredients for the meatball are finished

Step 5, find a big bowl, put the meat mince, carrot shreds, and shiitake mushroom mince in it, and beat in one salted egg white, so you don't need to add salt

Step 6, add 20g oyster sauce, 15g cooking wine and 15g water, and fully stir evenly

Step 7, find a flat bottomed big bowl, spread the meat mixture thinly, don't use a bowl that's too deep, it's hard to steam, Step 8, put all 8 salted egg yolks into the meatball, and the remaining 7 salted egg whites were thrown away

Step 9, put the big bowl in the pot to steam for 25-30 minutes. The steaming time should be longer to ensure that the egg yolk is fully cooked, so that it has a loose flowy texture

Step 10, after 30 minutes, the egg yolks are all cooked

Step 11, sprinkle a handful of scallion on top to increase fragrance and greenness

This sinful dish that makes people feel guilty, but why does no one refuse to eat it? Everyone can only eat at most 2 salted egg yolks.
