Today's dry-fried shredded beef can be said to be a snack for drinking, but also a casual snack. It has spicy, hot, fresh and fragrant flavors, as well as a crispy texture. 1. Wash the beef and soak it in clean water for 1 hour to remove blood water.
2. Place the soaked beef in clean water and begin to boil, adding (liao jiu -), onion segments and ginger slices to the water.
3. Once boiling, reduce the heat to the lowest setting and cook for 1 hour before draining the water and removing the beef.
4. While still hot, use your hands to shred the beef into beef strips.
5. The thickness of the beef strips can be adjusted according to your preference (I personally prefer thin beef strips, which are especially fragrant and crispy after stir-frying – the texture is superb!).
6. In a wok, add a little more oil than usual for stir-frying, and heat the oil to the highest setting before pouring in the shredded beef.
7. Quickly stir-fry over high heat for about 3 minutes – your friends can adjust the time according to the thickness of the beef strips you shred.
8. After the beef is fried, use a spatula to shovel the beef strips to the side, and add (huā jiāo lì -) in the remaining oil to flavor and crisp it.
9. After the (huā jiāo lì) is fragrant, stir-fry the beef strips together, and add an appropriate amount of (shēng chōu - ) for flavoring and coloring.
10. Add (là jiāo fěn - ) in moderation – add more if you like spicy flavor.
11. Add an appropriate amount of (yán - ) and (bái táng - ) to season, sprinkle with a lot of (bái zhī má - ) and a little (jī jīng - ) and stir-fry until well combined before serving.
