Production Steps

Step 1: First, pour 400 grams of common flour into a large bowl, add 5 grams of white sugar to promote fermentation, add 4 grams of yeast powder, and mix with 210 ml of warm water to form a dough. While pouring, stir until a large dough mass is formed, then add 25 ml of edible oil (adding oil makes the pastry even softer), and knead into a slightly soft and smooth large dough mass. Cover with plastic film and let it rise twice its size

Step 2: Next, we'll make the oil dough. Pour 40 grams of common flour into a bowl, 5 grams of salt, 3 grams of five-spice powder, and 3 grams of pepper powder. Add 40 ml of hot oil and stir until well combined. Set aside

Step 3: The dough has risen well. Sprinkle some dry flour on the dough and place the risen dough on a working surface. Knead and press out the air with your hands, then roll it into a long strip and cut it into 5 evenly sized dough pieces

Step 4: Take one dough piece and knead it into a ball. Gently flatten it with your hand and roll it out with a rolling pin. Evenly smear the oil dough on it, then roll it up using the accordion method, pressing one end to the bottom, and twist with both hands in opposite directions. This creates a pastry dough. After making all the dough pieces, brush a thin layer of water on the surface, and then sprinkle with white sesame seeds. Roll it out with a rolling pin to a 1 cm thick round pastry. After making all the pastry, cover with plastic film and let it rise for 10 minutes

Step 5: Preheat the electric griddle over low heat and heat the oil until sesame seeds are on one side. Place the dough piece on this side, brush with a layer of edible oil, cover with a lid and steam for 40 seconds. Open the lid, flip it over, and cover with a lid again to steam for 40 seconds. Fry until both sides are golden and crispy, and it's ready to come out of the pan
