Steps:
1Wash and chop scallions, separating the white and green parts. Chop the red chili peppers into small pieces and set aside;
2Cut the tofu into slices, open the packaging, and cut into pieces. Arrange the pieces neatly on a plate over the tofu;
3Heat oil in a pan, add ginger and garlic, and chopped scallion whites and red chili pepper, stir-fry until fragrant. Add ground pork and stir-fry until it changes color. Add 1 tablespoon of (liao jiu - cooking wine), 1 tablespoon of (sheng chou - soy sauce), a little old soy sauce, and 1 small spoon of salt, and stir-fry until cooked. Take out of pan;
4Evenly spread the stir-fried ground pork on the tofu;
5Boil water in a steamer, put in the tofu, steam over medium heat for 10 minutes, sprinkle with scallion flowers (scallion greens) before serving;
