Dry-Fried Small Yellow Croaker
Dry-fried small yellow croaker is a delicious dish.

Ingredients
One pound of small yellow croaker, 2 spoons of (liao jiu -), 2 green onions, 1 small spoon of ginger, 1 spoon of salt, 1 egg, half a two of starch, 1 two of flour, appropriate amount of edible oil

Instructions
1. Peel, de-gill, and de-gut the small yellow croaker and wash it for later use.
2. In a large bowl, mix the small yellow croaker with (liao jiu -), green onion segments, ginger slices, and salt, and marinate for about 20 minutes.

3. Mix the egg with flour, starch, and mix to make a fish batter for later use.
4. After marinating the small yellow croaker, remove the peppercorns and green onion and ginger, and hang the batter for later use.
5. Add plenty of oil to the pan, heat it up, and deep-fry the fish until it is cooked. You can re-fry it once to make the fish even crispier.
