5. Add green bell pepper and stir-fry over high heat until slightly crisp, season with salt as needed.



Ingredients: Mushrooms; Yam; (liao jiu - liquor); (sheng chou - light soy sauce); (lao chou - dark soy sauce); Sugar; Salt;

Instructions: 1. Peel and slice the yam into strips (do not cut too finely, they will break easily when cooked). Wash and slice the mushrooms into pieces (boiling the mushrooms will shrink, do not cut them too thin).

2. Boil the mushrooms to remove the earthy flavor (squeeze out the water from boiled mushrooms before stir-frying to avoid too much moisture).

3. Add a generous amount of oil to the pot, heat up and pour in the yam, stir-fry until golden brown and cooked through (the heat level for yam is very important, too little time and it won't be tender, too much time and it will be mushy. Use chopsticks to pick out thicker yam slices and break them in half – this indicates they are cooked).

4. Add the mushrooms, add liquor, light soy sauce, a little dark soy sauce and a little sugar and stir-fry evenly (add salt according to taste).

5. Simmer over high heat until the sauce is reduced and thickened (this makes the dish more fragrant).



Ingredients: 500g ribs, 1 can of cola, 1/2 green onion, a little Sichuan peppercorns, 1 small piece of ginger, 1 star anise, 1 stick of cinnamon, 1 spoon of dark soy sauce, 1 spoon of vegetable oil.

Instructions:

1. Wash the rib bones and put them in a pot with water, bring to a boil, skim off the foam, and then rinse with hot water.

2. Place a frying pan on the fire, add oil, heat to 50% hot, add ginger slices and green onion to fragrant.

3. Pour in the boiled ribs, stir-fry, add dark soy sauce, add star anise, Sichuan peppercorns, cinnamon and stick of cinnamon.

4. Finally, pour in a bottle of cola, cover the ribs, bring to a boil and then reduce the heat to simmer for 40 minutes.
