Hundred Flavors of Tofu - Stone Slab Tofu, Exploded Tofu


Main Ingredients

Silken tofu 200g.

Additional Ingredients

2 chicken breast slices (approx. 40g), 35g shrimp, 35g pork belly, 4 egg whites, 24 large heartnuts.

Seasonings

1000g vegetable oil (approx. 80g consumption), 35g starch, 25g scallion & ginger juice, 25g cooking wine, 5g salt, 5g MSG.

Knife Work

Cut the chicken breast into pieces after removing the membrane and combine with pork belly and shrimp, then chop finely and place in a bowl.

Preparation

1. Strain the tofu through a sieve, then place it in a bowl, add the meat puree, scallion ginger juice, egg whites, cooking wine, salt, MSG and water (as needed), mix well and stir until smooth, ready for use.

2. Take a flat plate, a layer of oil on one, pour the prepared tofu puree (leaving out a spoonful of heartnuts) into the plate, steam over heat until cooked, cut into 4.5cm long and 1.5cm wide rectangular blocks (total 24 pieces).

3. Soak the heartnuts in boiling water until soft, then peel and fry in warm oil, remove and drain.

4. Mix a paste with appropriate water, starch and egg whites.

5. Dip the fried heartnuts in the starch-egg white paste, stick to the tofu puree, fill the good tofu blocks, then put them into a pot of hot oil and fry until cooked, remove and plate immediately.

Characteristics

Yellow and white in color, tender and crispy texture, flavor is fragrant and delicious.

1000g vegetable oil (approx. 75g consumption), a little sesame oil, appropriate amount of flour and water starch, 50g milk, 5g salt, appropriate amount of broth, MSG, scallion and garlic (a little each).

Knife Work

1. Cut the tofu into 1.5cm square pieces.

2. Chop scallions and garlic slices.

Preparation

1. Mix milk, salt, MSG and broth to adjust the seasoning.

2. Beat eggs into egg liquid, add water starch and flour to make a paste.

3. Pour oil into a spoon, heat until 70% hot, place tofu cubes with a uniform thin paste into the oil, fry until golden yellow, remove and drain.

4. Pour hot oil into a spoon, sauté scallions and garlic, then pour in the fried tofu cubes, immediately pour in the adjusted seasoning, flip a few times, drizzle sesame oil and serve.

Characteristics

Salt and MSG are just right.
