Have You Ever Tried the Delicious ‘Liangfen Yu’ Dish from Qiyang, Gansu?
In Qiyang, Gansu Province, every summer, every household makes a delicious dish called 'Liangfen Yu' (Cold Noodles Fish). I used to make it often when I was at home, but I hadn't made it once in the past fifteen years in the south. I saw it on TV yesterday, which aroused my appetite. It's just another way of making cold noodles!
Ingredients: 200g red potato starch, 1000ml water
Instructions: 1. Use 400ml of water to make the red potato starch into a thin paste. 2. In a separate pot, pour the remaining 600ml of water and bring to a boil. 3. Stir the potato starch water again, pour it into the boiling water, and stir quickly with a spoon until the starch water becomes transparent and cooked through. 4. Place a steaming basket (preferably a large one), with a basin below, pour cold water into the basin, place the steaming basket on the basin, and pour the cold noodles into the steaming basket. Stir the cold noodle paste, and it will naturally fall into the basin below, forming a shape like a small fish. 5. Pat the 'fish' dry with a sieve. 6. Cut the cucumber into strips, pound garlic into a paste, mix with oil, soy sauce, and vinegar. 7.
