Private Chef: Chapter 18 - Preserved Meat and Soft Pancake Stir-fry
My grandmother is from the north, so making noodles is a masterpiece. She could effortlessly make dumplings, buns, and pancakes. I remember when I was a child, my grandmother would often make a delicious dish for me - fried pancakes. The cooked pancakes were cut into strips and then stir-fried with meat. The taste is unforgettable to this day.
We have some flour left, and we should make pancakes. It shouldn't be enough, so we can adjust the consistency and make a few egg soft pancakes. After making the soft pancakes, we can follow my grandmother’s method and stir-fry them. The taste should be very good. We also have some preserved meats, so let’s add some pork belly and sausage to make a plate of preserved meat fried soft pancakes, let me also reminisce about my childhood.
Main ingredients: 3 large spoonfuls of flour

Accessories: 2 eggs, 1 sausage, 1 small piece of pork belly, appropriate amount of green vegetables



Ingredients and seasonings: Salt, pepper, Lao Gan Ma (Master Lau’s chili paste), soy sauce, sesame oil, black sesame

Method of preparation:
Beat two eggs into the flour bowl.

Pour in 1/2 bowl of water, add a little salt and pepper.

Mix well to form a batter.

First, lubricate the pot with clear oil, then use a large spoon to scoop 3 spoonfuls of batter to make soft pancakes. About 1 bowl of batter can make about 3 pancakes. Note that during the entire process of making soft pancakes, you must not use high heat, and you must use low heat.

Roll up the fried pancakes.

Then cut them into strips.

Cut the sausage and pork belly into slices, in a pot, add a little oil, stir-fry the sausage and pork belly, while stir-frying the preserved meats, you can add a little water, which makes the preserved meats easier to cook.
Add the green vegetables, stir-fry for two times, then pour in the soft pancakes, then add 1 tablespoon of Lao Gan Ma, 1 tablespoon of soy sauce, drizzle a little sesame oil.

Stir-fry for a few times, stir the seasonings evenly, and finally sprinkle with black sesame.

Egg soft pancakes can also be eaten as a dish or as a main course. This dish instantly brought me back to my childhood!
