Golden Sand Baby Potatoes

Ingredients
400g Baby Potatoes / 100g Breadcrumbs / 1 Preserved Duck Egg
1 Head Garlic / Appropriate Amount of Green Onions
Seasoning
1.5 Tablespoons Salt / 1 Tablespoon Sugar

▼ 1. Clean the Baby Potatoes: Use a brush to scrub off the surface layer of foam and dirt from the baby potatoes. Because this dish is eaten with the skin on, it must be thoroughly washed.

Comparing the cleaned potatoes with the unwashed ones, don't they look much whiter?
▼ 2. Steam the Baby Potatoes: Place the baby potatoes in a steamer and steam for about 20 minutes until they are fully cooked. You should be able to easily pierce the potatoes with a fork, indicating they are cooked through.

▼ 3. Prepare the Ingredients: While the potatoes are still hot in the pot, peel and chop the garlic, removing the root end, and mash with a garlic press or chop into small pieces.

Cut the green onions into green onion flowers, remove the yolks from the preserved duck eggs, and if you buy raw preserved duck eggs, put them into the steamer with the potatoes and steam for 10 minutes.
▼ 4. Flatten the Potatoes: After the potatoes are cooked, take them out and let them cool slightly. Use a knife to flatten the potatoes, creating some cracks, but don't mash them into a puree.

▼ 5. Fry the Potatoes: Add a little oil to the flat-bottomed pan, and put the potatoes in.

Cook over medium heat and sear both sides until they are a beautiful light golden brown.

▼ 6. Make Golden Sand: Add a little oil to the flat-bottomed pan, and sauté the garlic until fragrant.
When the garlic paste turns golden yellow, add the preserved duck eggs and stir-fry evenly.

Pour in the breadcrumbs and stir-fry over medium heat until the breadcrumbs are golden and crispy.

▼ 7. Mix Seasoning: Add the fried golden sand to the potatoes.
Add 1.5 Tablespoons of salt and 1 Tablespoon of sugar, and stir-fry evenly. Sprinkle with green onions and you're done!
