Learning to Fry Turnovers from Old Man Bone
Zhaihuai (Fried Turnovers), a traditional Beijing Muslim snack. The origin of the name is said to be that early on, a Muslim restaurant was struggling and the owner was about to close down. He used the only bit of beef he had, chopped it into meat filling, and made turnovers to fry himself. Suddenly, a customer appeared, saw the turnovers were special, tasted them and praised them highly, and brought them back to share with his friends. The snack gained popularity overnight, and many food enthusiasts came back for more. Another explanation is related to the method of preparation, which requires twisting and turning the dough into a turnover shape.


Here's the recipe:
1, Beef cut into a meat filling, mixed with chopped green onions, ginger, yellow mustard, soybean oil, flower dewdrops (Sichuan peppercorns), black pepper, fragrant oil (sesame oil), and salt. Add chopped chives before wrapping.
2, Make dough and shape it into (jiuzi - dough pieces), then roll it out into large dumpling wrappers, and place the filling on it.

3, Seal the edges to create a large dumpling shape.

4, Twist and turn the ends of the turnovers and pinch them together.

5, Heat oil to 60% hot, reduce the heat, and slowly fry the turnovers until they are fully cooked.


Bite into them, with crispy outside and tender inside, and juice flows out of your mouth.
