Hui Cuisine Series – Huizhou Yellow Bean Bao Recipe
Huzhou Dou Huang Baozi is a traditional snack from the Huizhou region, a food that combines fragrance, yellow color, crispness and deliciousness, with unique and distinctive flavors. It is also known as 'Stone Baozi'. It uses mountain spring water and excellent flour, wrapped with various fillings, to create two-layered baozi with uniform thickness and sprinkled with black sesame. When baked over charcoal fire, a round slate is placed on top during the baking process.

Main Ingredients:
Flour, yellow bean powder (coarse grain), pork belly, sprouts. Auxiliary Ingredients: Salt, sugar, edible oil, sesame, drinking water
1. Wash and slice the pork belly into small pieces (not pork board oil).
2. Take two portions of yellow bean powder separately, one portion added to pork belly pieces, sugar, water and oil, the other portion added to pork belly pieces, salt, sprouts, water, oil.
3. Because the dough needs to rise, first knead the dough, the picture is for puzzle convenience, in fact, first knead the dough.
4. Divide the rested dough into two portions, and then divide each portion into six small portions, and then roll each small portion into a ball, take one piece and flatten it, cover the rest with plastic film.
5. Put the filling in, and try to put in a lot, and wrap it like dumplings.
6. Sprinkle sesame on the table, wrap the baozi with the mouth facing up, press it on the sesame, try to press it thin.
7. Heat a flat pan, add a little edible oil, put the baozi in, press a weight on it, when one side is cooked, flip it over and continue pressing until both sides are golden brown.
