Method & Steps

1,First, we need to prepare about half a jin of celery. After preparing the celery, first pick off the celery leaves, wash them clean, blanch them in boiling water for two minutes, then drain and set aside, then chop them into small pieces and put them into a bowl for later use. Then add an appropriate amount of flour and an egg and stir until evenly mixed.

During the mixing process, if the flour is too dry, we can add an appropriate amount of warm water to mix it until the flour appears a cotton-like texture, and then knead it into a dough and let it ferment for 10 minutes before taking it out for use.

2,After fermenting the dough, we need to shape it into strips, then cut it into seven or eight small pieces, and use our hands to flatten them to make the pastry. Then prepare a flat pan or an electric pan and brush it with an appropriate amount of edible oil. When the oil temperature is heated to 50%, put the pastry into it and bake over low heat until both sides are golden brown.

After baking the pastry, we need to cut it into small strips and set it aside. Then, in a separate pan, add half a pan of water to the pan, bring the water to a boil over high heat, add the prepared celery segments and a red bell pepper cut into strips, and blanch them for three minutes until the celery segments are slightly cooked, then drain and set aside.

3,Heat oil in a pan, add a spoonful of edible oil to the pan, and when the oil temperature is heated to 70%, add the prepared ginger blocks and garlic to the hot oil and sauté until fragrant, then add the prepared celery segments and sauté for half a minute, then add a spoonful of salt, two spoonfuls of old soy sauce, and a spoonful of light soy sauce.

Finally, just put the prepared pastry strips into the pan and stir-fry with the celery segments until evenly mixed, and then drizzle an appropriate amount of cornstarch water into the pan to thicken the sauce, and cook over high heat to reduce the sauce and serve the stir-fried celery pancakes, which are really delicious!

Tips

1, Celery leaves are all edible. If you make them in the way I taught you, you can eat all parts of the celery.

2, When baking the celery pancakes, the heat should not be too high, low heat slow baking can make them bake well.
