On cold nights, it's inevitable to crave a warm bowl of comforting congee. Tonight, let's make a quick seafood congee to nourish our family, especially since we have a lot of seafood ingredients left in the fridge (it's just too convenient, isn't it?).

Ingredients:

White rice 80ml

Shrimp slices half a box

Cooked shrimp 1 box

Red Snapper slices half a box

Oysters 16 pieces

Scallions chopped 3 stalks

Rice wine 3 tablespoons

Salt to taste

Water 1000ml

Instructions:


1Pour water (water to rice ratio is 12:1) into the pot approximately 1000ml and bring to a boil


2Add white rice and boil again

3Remove excess bubbles and discard

4After about 10 minutes of boiling, cover and simmer for 10 minutes until the rice grains expand, then uncover and stir with a whisk to make it smooth

5Stir until the rice grains are fully dispersed as the base of the congee

6Add seafood ingredients and rice wine approximately 3 tablespoons to remove fishy smell

7Put the seafood ingredients into the congee, boil over medium heat, add salt to taste

8Cook until the oysters open completely

9Turn off the heat and stir in the chopped scallions

10Finished

Little Secret:

When buying oysters, you need to soak them in water and add two tablespoons of salt to break them up, let them drain for 30 minutes, then rinse, and the draining process is complete.
