Ingredients: eggplant, starch, scallions, white sugar, white vinegar, chili oil, cilantro
Instructions:
1. Wash and peel the eggplant, cut into strips. Chop scallions and cilantro into segments.
2. Make the sauce: Add a spoonful of white sugar, a small amount of chili oil, and a little white vinegar to a bowl and mix well.
3. Season eggplant strips with a pinch of salt, then roll them in starch to coat them evenly.
4. Heat oil in a pan, when the oil temperature is 50% hot, add the eggplant strips until they are golden brown on both sides and remove them from the pan to drain the oil.
5. Arrange the sliced eggplant on a plate, pour in the sauce, and mix in scallions and cilantro.
