How to Make Buckwheat Noodles - Chewy and Delicious, Loved by Cold Noodle Fans

Recently shared a buckwheat noodle bowl base made with a washing method, and many people commented that why it's not steamed directly with dough? I promised everyone to try another method of directly steaming with dough paste, but it took me until today to finish the task. I personally tried it, steaming the dough paste made by washing noodles directly with water, the difference in taste compared to steaming with a dough ball and then washing it with water to make a dough paste is not that big, but the washed noodles made by washing the noodles after folding in half and cutting didn’t break as easily when I picked it up, so the washed noodles have a little more toughness. However, it really tastes the same when eaten.

This is the cut bowl base, I feel it's more chewy than directly using buckwheat flour to make noodles, I prefer this method, it’s also convenient and delicious, and now it’s getting hotter and hotter, it’s even better to eat it cold.

So, do it according to your preferences! If you’re diligent or have more time, wash the noodles and make them; if you’re in a hurry, just make it with dough paste, as long as the sauce is well-made, it tastes good no matter how you make it. I made it by the cold and spicy cold noodle method today, and I also added my own steamed gluten and green beans. Finally, drizzling with chili oil was very delicious!

Ingredients: 250g buckwheat flour, appropriate amount of water, 4g salt, 10g soy sauce, 10g vinegar, yellow squash, steamed gluten, green beans in a moderate amount, sesame paste in a moderate amount, chili oil in a moderate amount, minced garlic and coriander in a moderate amount.

Making process:

1 First take a large bowl, weigh 250g buckwheat flour into it, this buckwheat flour is pure buckwheat flour, I didn’t add any white flour, many people add white flour into it, I want to eat pure buckwheat so I didn’t add any.

2 Add 4g salt to the buckwheat flour, one is to enhance the flavor, and the other is to strengthen the gluten.

3 Slowly add 300g of water, stir with chopsticks to make a paste.

4 First stir into a relatively thick paste, make sure there are no dry flour granules.

5 Then add some water and continue to stir, make into a slurry like the picture, when lifted, the slurry will drop in lines.

6 Find a steamer in your steamer that can hold the largest container, pad a long oil paper or oil cloth at the bottom, I used oil cloth, which is very effective, because we want to save gas! The biggest container is not only more energy-saving, haha!

7 Pour the mixed paste into it halfway, I make 250g of buckwheat flour each time, steam two sheets, three people just enough to eat one meal, you can adjust according to your own situation.

8 Lift the plate and turn it over, spread the dough paste evenly.

9 Put it into the steamer to steam for 15 minutes, I use a steamer oven, so my container is a large tray, if you use a steamer, you can steam two or three layers at once.

10 After steaming, lift the oil paper and invert the dough paste onto a cutting board, you can see that there’s no dough paste attached to the oil paper, which is very effective.

11 Cut the steamed dough paste into your favorite thickness, I cut it when folding it in half and cutting, when I picked it up, it broke a little, so don’t fold it, just cut it into long strips.

12 Take a salad bowl, put your favorite vegetables into the bowl, I put yellow squash and blanched green beans.

13 Add the buckwheat noodles and coriander.

14 Add minced garlic, 10g soy sauce, 10g vinegar, and a mixture of sesame paste made by dissolving chillies in cold water and salt.

15 Finally drizzle with chili oil and it’s done!

Tips: 250g of buckwheat flour can feed three adults for one meal, you can adjust the amount according to your family’s situation, the thickness of the dough paste can be adjusted according to your preference, you can steam it thick or thin, but make sure that thick ones need to be steamed for longer, I think the washed noodles make it feel more tough, but the taste is almost the same.
