This ingredient is frequently consumed in my home; it not only protects the gastrointestinal mucosal membrane but also promotes ulcer healing.
This is a lazy man's quick meal bento box. The leftover rice from the previous night is used to make fried rice overnight, and it's perfectly enhanced with a dash of organic soy sauce, filling the kitchen with a wonderful aroma. It reduces salt intake while boosting the flavor of soy sauce. Paired with crunchy cucumber and sour kiwi, it effectively cuts through the richness, and a touch of pumpkin provides satiety while protecting the stomach lining and promoting ulcer healing.

Ingredients:
Rice 150g, shrimp 60g, egg 1, mixed vegetables 50g, cooked pumpkin 100g, cucumber 100g, kiwi 1, lettuce, water, scallions (green onions) a little.
Seasoning: Organic olive oil 6ml, organic soy sauce 6ml, organic rice vinegar appropriate amount.
Instructions:
1 Prepare the ingredients, the rice can be leftover rice, if steamed, water and rice 1:1, steam a little harder to be suitable.
2 Beat the egg with a little water and stir until smooth.
3 Cut the shrimp into small pieces.
4 Heat 3ml organic olive oil in a non-stick pan.
5 Pour in the egg mixture to make egg ribbons and then scoop out.
6 Pour in 3ml organic olive oil to heat in the pan, sauté scallions, and stir-fry mixed vegetables and shrimp over medium heat.
7 Add rice and stir-fry evenly.
8 Pour 6ml organic soy sauce and stir-fry until combined.
9 Finally, fold in the cooked egg and turn off the heat.
10 Peel the cucumber thinly with a peeler.
11 Wipe the bento box with organic rice vinegar to slow down the spoilage of the ingredients. Place the bento box with lettuce lining the bottom and then place the fried rice in one box and the cucumber slices, pumpkin chunks and kiwi in the other.
Tips:
1 Leftover rice can be used, if steaming, water and rice 1:1, steam a little harder to be suitable.
