Mao You Ji Fan + Cucumber and Clams

Ingredients:
Chicken thigh cut into dicing 1 piece
Rice 1 cup
Cucumber 1/3 piece
Clams 6-7 pieces
Minced ginger appropriate amount

Mao You 2 spoonfuls
Cranberries appropriate amount
Rice wine 1 spoonful
Soy sauce 2 spoonfuls
Salt appropriate amount
White pepper appropriate amount
Water 0.9 cups
Method:

1Marinate chicken dicing with rice wine and soy sauce for 15-20 minutes

2Heat oil in a pot, sauté minced ginger until the aroma comes out, then put down the marinated chicken dicing and stir-fry until 4 minutes cooked

3Add rice and stir-fry until rice grains are evenly coated with oil, then add water (water ratio is rice 1:water 0.9, because the chicken meat itself has oil and moisture)
4Steam, first cover a little ginger shreds, then sequentially add cucumber, clams, ginger shreds, cranberries (cranberries need to be soaked in rice wine for 15 minutes to be more fragrant) into the pot

Pick good cucumber, first squeeze the cucumber body to be firm (too soft cucumber may have fiber loss affect the taste), the skin color should be dark green, the weight should be heavy, the end edge retains yellow green flower bud, such cucumber is most tender
