Country Chicken Braised in Clay Pot
Yellow Chicken
Ingredients: 1 chicken (about 1500g), potato cubes, smoked bamboo shoots (150g each), 60g homemade fermented bean paste, 10g Sichuan peppercorns, 20g aged ginger slices, 50g garlic cloves, small ginger slices, green and red chili pods, garlic sprouts, dried chili peppers, squid powder, fragrant oil, star anise powder, MSG, chicken essence, wine, oil, chili oil, vegetable oil, homemade red oil (150ml each)
Instructions:
1. Cut the chicken into pieces after slaughtering and cleaning.
2. Heat vegetable oil and homemade red oil in a pot, add aged ginger slices, garlic cloves, Sichuan peppercorns and homemade fermented bean paste and stir-fry until fragrant, then add dried chili peppers and squid powder and stir-fry evenly, then add chicken pieces while stirring in star anise powder and wine, when the chicken is soft and cooked in a pressure cooker, remove from heat and set aside.
3. Heat vegetable oil in a wok, add small ginger slices, green and red chili pods and garlic sprouts and stir-fry until fragrant, then pour in the chicken pieces cooked in a pressure cooker, along with previously cooked smoked bamboo shoots and potato cubes and stir-fry, before serving add chicken essence, MSG, and drizzle with fragrant oil and chili oil, and serve.
