New Ways to Eat Flour
This is a very special time, and the household food supply is not abundant. With flour, you can manage to have three meals a day. Today, let's make a Dongguan-style noodle dish: Knife-Cut Spicy Tāngruǎn in Salty Broth.
1Prepare 100g of glutinous rice flour and 100g of regular flour, and knead them into dough separately; a small bunch of green vegetables, a little preserved vegetable (washed with water to reduce saltiness), and a fish head, cleaned and salted for half an hour (using chicken meat to cook is more authentic, but ingredients are limited, let's make do),

2Shape the glutinous rice dough into small circles, and press the regular flour dough into small pieces. See the picture below.

3Heat oil in a pot, fry the fish head until both sides are golden brown, then pour in about 1 liter of water and add the cut dough to cook until the dough and balls float, add pepper to taste (because the fish head is already flavorful, and the preserved vegetable is salty, so no need to add salt), add the green vegetables and cook until they rise again, then take out the pot.

4The finished product is out of the pot, and it's a good way to spend time during this special period.
