Step 1: Wash the potatoes and peel off the skin using a peeler, then cut them into small pieces.

Step 2: To prevent oxidation and discoloration, wash the excess starch on the surface of the potatoes with water, then put them in a sieve to drain the moisture. This will prevent oil from splashing and burning when frying later.

Step 3: Add a little oil to the pot and heat it until 45% to 50% hot. Put a chopstick into the pot, and when a small bubble appears, it means the oil temperature is just right. Put the drained potato pieces into the pot and fry over medium heat. Fry until the potato surface turns yellowish, and then remove it. When frying, gently shake the pot or use a spoon and a colander to push the potatoes a few times to prevent them from sticking together and to ensure uniform heating of the potato pieces.

Step 4: Add a little leftover oil to the pot, then sauté minced garlic until fragrant. Then add the potato pieces and pour in a bottle of Coke or Pepsi. Cook over high heat until boiling, then add an appropriate amount of salt, and cook for about 5 minutes. Reduce the heat and simmer for 5 minutes before returning to high heat to reduce the soup. If you are worried that the potatoes are not cooked enough, you can cook over high heat for 5 minutes, then reduce the heat to simmer for 5 minutes before returning to high heat to reduce the soup. After plating, sprinkle with roasted sesame seeds to add fragrance.
