Instructions:

4 Blanch the bean sprouts in boiling water until they are slightly cooked, adding an appropriate amount of salt during the blanching process

5 Spread the blanched bean sprouts evenly in a basin

6 In the pot, add a suitable amount of oil, and fry Sichuan peppercorns over a small fire to release their aroma

7 After turning off the fire, briefly fry the dried red chili peppers and add them together for later use

8 Add a large spoonful of chopped Sichuan chili oil and douban sauce to the pot, stir-fry until red oil is released

9 Add sliced ginger and garlic and stir-fry for a moment

10 Add an appropriate amount of hot water to bring it to a boil, with the water level just covering the fish fillets

11 Gently place the fish fillets one by one into the pot

12 Cook until the fish fillets turn white, and pour the broth along with the fish and bean sprouts into the basin that contains the bean sprouts

13 Place the previously fried Sichuan peppercorns and dried red chili peppers, as well as chopped green onion, on top

Dry-Fried Green Beans

3 Pour oil into the pot, and fry the pork belly over high heat, draining off the rendered oil

4 Heat the remaining oil and add minced green onion, ginger, cinnamon leaf, star anise, and liquor

5 Add an appropriate amount of water to cover the pork belly, add sugar, flavoring, salt (4g), chicken powder, light soy sauce, and caramelized light soy sauce, and simmer for 45 minutes over low heat, then increase the heat to thicken the sauce.
