Egg Yolk 3, Flour 50g, Cornstarch 100g, Salt 20g, Sichuan Peppercorns 20g

Seasonings

Salt 2g, Flavor Enhancer 2g, Cooking Wine 0.2g, Peanut Oil 100g, Black Pepper, Water a little


Making Process

(1) Place shrimp in a bowl, add salt, flavor enhancer, and black pepper, and marinate for 2 minutes.

(2) In a bowl, add egg yolks, flour, cornstarch, and a little water to make a thin paste.

(3) Heat peanut oil in a spoon to 150 degrees Celsius. Mix the shrimp into the paste and drop them one by one into the hot oil until 90% cooked. Remove with a slotted spoon and shake to separate the shrimp, then when the oil temperature rises to 180-200 degrees Celsius, put the shrimp in to quickly fry and remove, arrange on plates with salt.

Auxiliary Ingredients: Egg Yolk, Cornmeal, Salt

1. Heat the oil.

2. Cut the shrimp, remove the shell and devein, add half an egg yolk.

3. Add a little edible salt.

4. Add cornmeal.

5. Stir well.

6. When the oil is hot, pour it in.

7. Fry until golden brown, remove from heat.

Tips

When making shrimp, try to use less salt, as too much salt will diminish the shrimp's flavor. Must be served hot immediately after cooking, or the texture will be poor.

  • Green Onion 1 Piece
  • Ginger 1 Small Piece
  • Cooking Wine 1 Tablespoon
  • Salted Caramel 1 Teaspoon
  • White Pepper 1 Teaspoon
  • Water 80g
  • Vegetable Oil 200ml

Instructions

1. Prepare all the necessary ingredients.

2. Wash and dry the shrimp, add white pepper, cooking wine, green onion, and ginger, and marinate for a short time.

3. Add eggs to a bowl and whisk with 80g of water.

4. Mix flour and egg liquid.

5. Stir into a thin slurry.

6. Add the marinated shrimp.

7. Heat vegetable oil in a pan, add the shrimp coated in slurry.

8. Remove the fried shrimp, dip in salted caramel, and eat. The taste is best.
