Nostalgic Childhood Flavor: Simple Sticky Rice Cake Recipe – A Burst of Rice and Date Flavors in Every Bite
Glutinous rice and dates are a common traditional snack, fragrant and soft with glutinous rice, and also nutritious. Glutinous rice is warm in nature, sweet in taste, and enters the lungs, spleen meridians, with the effects of replenishing deficiency, blood, warming the stomach. Red dates are warm in nature and sweet in taste, containing protein, calcium, phosphorus, iron, magnesium and rich vitamins, very nutritious.

Ingredients
Dates 120g, glutinous rice 200g, white sugar 25g, water as needed, dried cranberries 30g.
Instructions
1 The dates with kernels need to be removed first.

2 Glutinous rice does not need to be soaked in advance, put into the rice cooker, add a little more water than usual when cooking rice.

3 Cut the dates with kernels in half vertically, put them on the pot and steam for 15 minutes.
4 Prepare a box, spread a layer of cling film, according to the shape of the box, attach the four corners of the cling film to the box. I used a 640ml rectangular rice box, this recipe is just full of one box.
5 After steaming the glutinous rice, open the lid and let it cool for 5 minutes, put in white sugar, use a rolling pin to smash and mix the white sugar (I put a cling film on the rolling pin to prevent sticky rice from sticking to the rolling pin haha), glutinous rice does not need to be mixed too finely.

6 Scoop out a portion of glutinous rice and press it flat in a box with a rice spoon.
7 Evenly layer a layer of steamed dates, put the halved dates face down and arrange them.
8 After laying a layer of dates, lay another layer of glutinous rice on top and smooth it out, evenly layer a layer of dates, as in the previous step.
9 After laying a layer of dates, cover with a final layer of glutinous rice, finally sprinkle dried cranberries or other nuts, dried grapes, or match them randomly. Cover with cling film, press firmly with your hands, then cover with the box lid and put it in the refrigerator to chill.

10 After chilling for 4 hours or more, you can demold and slice. Check the side.
11 I made it at night, after putting it in the refrigerator, you can sleep, chilled overnight, in the morning, I sliced it, when slicing, dip the knife in water to prevent sticky rice from sticking to the knife and causing uneven slices.
