Radish Pickles Stir-fried with Salted Pork
This dish combines traditional Sichuan cuisine's salted pork with the rustic flavor of home-style pickled radish. It's particularly satisfying and goes well with rice due to its flavor and ingredient combination.
Instructions:
1. Cut the pork into slices, ensuring it's lean and fatty. Cut the radish pickles into small pieces.
2. Heat vegetable oil in a wok over high heat. Stir-fry the pork until it releases its oil, then add ginger, garlic, doubanjiang (fermented broad bean paste), chopped chili peppers, and a little salt and stir-fry.
3. When the aroma comes out, add the radish pickles and a little MSG. Stir-fry with scallion segments until the scallions are slightly wilted, then serve.
