Don't Follow the Crowd to Make Layered Buns, I Teach You 2 New Flour Recipes to Let You Make Delicious Snacks at Home

Let's get together and enjoy family time! During the Chinese New Year, the most popular online recipe is homemade sticky rice cakes. Although I learned to make them, I can't eat them every day at home, so today I want to share two new ways to use flour, so you can also make delicious snacks at home!

Meat-filled Layered Buns

I believe everyone at home has already gotten tired of sleeping noodles and even sticky rice cakes! So today I want to share a recipe with flour and ground meat, plus chives (scallions also work) to make layered buns. It's not only fragrant and delicious, but it's also very nutritious after a combination of savory and fresh ingredients.

First, mix the flour and water in a 2:1 ratio, meaning 500 grams of water to 250 grams of flour. Knead the dough several times, as the more you knead, the stronger the gluten will be. Knead the dough until it's smooth and shiny.

Next, prepare the meat filling. Chop the meat into meat mince and add it to a bowl with oil, soy sauce (Flavor Enhancer), a little salt, and cooked flower honey (chili oil) for flavor. Mix it in a clockwise direction. Note: Whether you're making layered buns or dumplings or buns, when making the meat filling, you should always mix it in one direction to make it firmer and not loose.

Put the meat filling into a bowl, then chop the chives (scallions) and cut them into small pieces to set aside.

Now, divide the dough into equal-sized dough pieces and shape them into rectangular buns, then make three cuts on the sides, as shown in the picture.

Spread the prepared meat filling on top, then sprinkle with chives. Start from the right side and fold it down to cover the middle, then fold the bottom layer up to cover it. After folding, fold it to the next layer until it's completely folded.

Finally, heat up a flat-bottomed pan with oil and fry until both sides are golden brown, and then take it out and enjoy!

Crispy Fried Dough Sticks

In most northern cities, fried dough sticks with bean curd milk is the standard breakfast! But many homebodies at home are very craving for fried dough sticks, because it's difficult to make fried dough sticks, so here we share a family-friendly recipe for fried dough sticks!

Ingredients: 250 grams of flour, one egg, 20 grams of peanut oil, 4 grams of baking soda, 6 grams of aluminum-free baking powder, 4 grams of salt, 120 grams of warm water.

First, beat the egg into an egg mixture, then add all other ingredients except the flour to the container, and mix well, then add the flour! Keep mixing until the dough is smooth and shiny. Did you notice? Whether you make layered buns or fried dough sticks, you always need to knead the dough until it's smooth and shiny, which is a key technique for making dough.

Put the dough into a plastic bag and put it in the refrigerator to let it rise for a night, so that the fried dough sticks will be fluffy and delicious.

Dust a little flour on the dough, then roll it out into a long strip and cut it into pieces. Use a brush to brush a little water on the dough pieces and overlap them, then press down in the middle with a chopstick.

Heat oil in a pot to 70% hot, then put the rolled dough sticks into the pot. Before frying, stretch the dough sticks, fry until both sides are golden brown, and then take it out and control the oil.

The temperature of the oil is very important when making fried dough sticks. If the oil temperature is too low, the dough sticks won't expand. If the oil temperature is too high, the outside will burn before the inside is cooked.

As for bean curd milk, I believe everyone can handle this. Personally, I like to add sugar to bean curd milk, and when I eat fried dough sticks, I will dip them in it, so that the fried dough sticks will be full of bean curd milk and delicious.

Finally, add some salted vegetable dumplings, which is perfect!
