Old Beijing Style - Braised Fire-Baked Bread
When it comes to Beijing snacks, you'll think of Peking duck, Jing eight pieces, candied haws, and so on. But there's one dish that people often eat –Lou-wa Huo-shao.

Lou-wa Huo-shao originally came fromSu Zao Rou,BecauseSu Zao Rouwas made with pork belly, which was relatively expensive, so some people used pig entrails (pig stomach, pig intestines, pig lungs, etc.) to replace it. Over time, it turned into a 'low-grade'Su Zao Rou,which is today's Lou-wa Huo-shao.

Authentic Lou-wa Huo-shao is made through multiple steps, including cleaning the pig entrails, preparing the seasonings, and controlling the heat. Once the pig entrails are cooked, they are combined with fire-baked bread and cooked together. Then, they are served with garlic sauce, tofu paste, and other side dishes.
Lou-wa Huo-shao is also a very nutritious dish, providing the body with protein, fat, calcium, iron, and other nutrients. It also has the effects of replenishing deficiencies, quenching thirst, stopping bleeding, and improving digestion.
