Sour Carp with Bamboo Shoots

Accessories:1 Egg White, 40g Mixed Oil, 4g Salt, 3g MSG, 4g Pepper Powder, 15g Liquor, 25g Chili Powder, 10 Peppercorns, 3g Ginger Slices, 7g Garlic Cloves
Instructions:
1After cleaning the fish, remove the head and fillet the fish into small pieces, cutting along the fish tail to the fish head in the direction, the thickness should not be too thin, otherwise it is easy to break. Cut the fish bones into small segments. If the pot is not big, you can leave the fish head later to make fish head soup. If the pot is big enough, you can cook the fish head together.
2Place the fish bones and heads in together with salt and liquor, and marinate the fish fillets separately with seasonings and salt for 10-20 minutes. Whisk an egg white and coat the fish fillets evenly. Cut the bamboo shoots into small segments and wash them 3 times to remove some saltiness, and prepare them.
3Heat the pot with oil, but not too much, too much oil will make the soup greasy. Use chopped green onions and garlic and ginger to stir-fry, then put in the marinated fish bones, stir-fry, add water, add enough water to cover the fish bones, add MSG and dry chili peppers. Add the bamboo shoots, bring to a boil, simmer for a long time to make the soup more flavorful. At this time, taste the soup to see if it's salty, and adjust the salt if necessary (because the salt has been added during marination, and the bamboo shoots are also salty).
4Add the fish fillets to the pot. When the fish fillets are cooked, immediately take them out of the pot and don't overcook them. Finally, add chopped coriander and serve in a large soup pot.
