I ordered 20 skewers of lamb in Xinjiang and was stunned when they arrived at the table, and the boss even laughed at me, which was embarrassing! When I first arrived in Xinjiang, I was deeply attracted by the scenery, but what really attracted me was the food of Xinjiang. We all know we've been eating fake lamb skewers for ten years. This time I finally had the opportunity to taste lamb skewers in Jining, which was really exciting for me, as I'm quite good at eating lamb skewers. Back in the days, when I and my friends went to barbecue shops, we basically ate from start to finish until they closed, and we could taste authentic Xinjiang lamb skewers—that was worthwhile for my trip to Xinjiang. However, when I arrived in Xinjiang, I couldn't find any Xinjiang lamb skewers on the streets. I realized that in Xinjiang, they only care about their local food, which is called skewers. So, lamb skewers are probably a cultural product of migration.
When I arrived at the barbecue shop, I told the boss, 'Give me 20 skewers of meat and one ( - Nang Roast Meat).' In Xinjiang, the most authentic food should be here. It's said that the lamb skewers are freshly slaughtered and ready to eat, without any pre-marination, just with some salt and chili powder. These lamb skewers are made in this way. It's a really authentic Xinjiang experience to eat lamb skewers here. But the boss looked at me with confusion and asked, 'Can you really eat so many?' I thought to myself, 'I used to be able to eat several plates of meat. How could I not finish this?' Although the boss kept saying that, I was already very hungry, and I could already drool at the sight of these lamb skewers. I could eat any amount.
Eventually, the truth hit me. I should have listened to the boss. During the day, I roasted the lamb skewers, and it was surprisingly easy. I thought the Xinjiang meat would be more flavorful than the lamb skewers we've been eating, but I didn't expect that the size of the lamb skewers in Xinjiang is different. When I came to this skewer shop, they used red willow to skewer the meat. These red willow skewers are just about the thickness of a little finger. If you match them, you need a huge piece. The impressive red willow lamb skewer I ordered was a whole plate. When it was served, I was stunned.
Finally, I ordered (Nang Meat - Nang Meat). It's also a local specialty of Xinjiang. In Xinjiang, they put the meat into the (Nang - Nang Pit) and cover the (Nang - Nang Pit) after the fire in the pit is extinguished. They use the heat inside the pit to cook the meat. This method makes the meat taste different from the meat cooked over open flames. We all know that (Nang - Nang Meat) might not be expensive, but it's very solid. A piece of meat this big would be very satisfying when eaten with the (Nang - Nang Pit), but the taste is really delicious. Although I'm already full, I can't stop eating.
