How to Make Cumin Lamb
Main Ingredients:
Lamb 400g Onion 1 piece Ginger 1 piece
Accessories:
Starch 5g Salt 5g Pepper 8g Light Soy Sauce 5g Dark Soy Sauce 5g Safflower Oil 8g Sichuan Peppercorns 10g Sugar 1 spoon
Instructions:
1. Soak lamb shank for 1 hour, rinse and cut into 5cm long strips
2. Add 2 spoonfuls of starch, a small amount of salt, pepper, cumin powder, light soy sauce, dark soy sauce, safflower oil, and salt. Do not add all at once because you need to marinate for flavor. Too much salt will make the meat tough. Marinate for 15 minutes
3. Chop onion into long segments and ginger into thin slices for preparation
4. Heat oil to sauté Sichuan peppercorns and ginger to release flavor, then remove
5. Add marinated lamb to medium heat and stir-fry, add 1 spoon of sugar
6. Increase the heat slightly when the meat changes color, and if you want a chewy texture, stir-fry the meat until it turns slightly yellow before flipping
7. After the meat is cooked, first add ginger, then add a little salt and cumin to sauté for flavor, and then add sesame seeds and coriander for garnish and plating
