Seasonal Vegetable and Bone Soup
Ingredients: 2 pieces of large bone, 1 sweet corn, several slices of ham, a few stalks of broccoli, a small amount of black fungus, 3 scoops of salt, a small amount of sugar
Method:
1Put cold water in the pot, put in the large bone, blanch off the blood, open the fire for 2-3 minutes, don't put the soup, take out the bone and wash it clean
2Refill with cold water, put in the large bone, add ginger slices, (liao jiu –), open the fire to boil, then appropriately remove the foam
3Add the ham slices, reduce the heat to a low flame, cover the pot with a lid, simmer for 1.5 hours
41.5 hours later, add the cooked black fungus, diced sweet corn, increase the fire, bring the broth to a boil
5Finally, add the broccoli, add salt and sugar to taste and chopped green onion
Ingredients: 300g of large shrimp meat, 10g of white gourd, a few strands of green onion, a small amount of red bell pepper grains
Seasonings: 1 egg, green onion juice, salt, chicken broth, dried starch, wet starch, green onion oil, pepper and (huojiao fan – pepper) all to taste
Method:
1. Slice the back of the large shrimp, remove the sand line, wash clean and absorb water, add egg, green onion juice, salt, dried starch and mix, marinate for 15 minutes, then blanch in 40℃ green onion oil, take out and drain the oil
2. Leave a small amount of green onion oil in the pot and heat it up, first put in the sliced cooked white gourd and stir-fry slightly, then put in the blanched shrimp balls, pour in a bowl of seasoned broth to cook until fragrant
3. When the broth is fragrant, use a large spoon to collect the broth
4. Put the blanched shrimp balls back into the pot, cover the pot with a lid and cook over medium heat for 2-3 minutes, then open the lid and use high heat to evaporate the remaining broth
5. Turn off the fire, put in a little (ma you – sesame oil), sprinkle a handful of white sesame and finally sprinkle a handful of green onion, and put it out of the pot and plate
Braised Pork Belly with Skin
Ingredients: pork belly, green and red bell peppers, salt, star anise, old ginger, (sheng chou – light soy sauce), black pepper, green onion, ginger, garlic
Method
1Wash and blanch the pork belly in hot water for 5 minutes. Take it out and rinse it in cold water, then put it in a pot and add water, put in star anise, green onion, ginger and boil until the pork belly is soft. Take it out and rinse it in cold water, then put it in a pot and add oil to boil until the pork belly is soft
2Put oil in the pot and sauté green onion and garlic until fragrant, then add green and red bell peppers and sauté
3Put the pork belly in and sauté for a moment, add (sheng chou – light soy sauce), old ginger and black pepper and mix well, then put it out of the pot
