Stewed Tofu

Ingredients: Tofu, pork, carrots, wood ear mushrooms, green peppers
Accessories: Green onion, ginger, garlic

Seasoning: Light Soy Sauce, Starch, Sugar, Oil, Doubanjiang (fermented broad bean paste), (jiu liquor), old ginger
Instructions:
1. First, process the ingredients. Cut the tofu into 1 cm thick slices, cut the green peppers into diamond-shaped slices, carrots into diamond-shaped slices, wood ear mushrooms into small florets, pork into thin slices, green onion into green onion shreds, ginger into ginger slices, garlic into garlic slices, and cut them all and put them together for later use.

2. Add an appropriate amount of vegetable oil to the pot, heat the oil to 50% hot, and then put in the tofu and fry for about one minute. Fry until the surface of the tofu is golden and then drain the oil to remove it. Frying the tofu makes the texture better and easier to absorb the flavor. You can also lightly pan-fry the tofu until the surface is golden.

3. In another pot, heat up the oil and add the pork. Stir-fry the pork until it changes color.

4. After the pork is stir-fried, add green onion, ginger, and garlic, then add a spoonful of Doubanjiang, and stir-fry for a moment to release the aroma of the accessories. Stir-fry Doubanjiang until it turns red.

5. Then pour in an appropriate amount of water into the pot, add 1 gram of sugar, 5 grams of light soy sauce, 3 grams of ji liquor, and 1 gram of old ginger, and stir-fry to dissolve the seasonings.
6. Then add the wood ear mushrooms, carrots, green peppers, and tofu, and stir-fry evenly.

7. After all the ingredients are stir-fried evenly, reduce the heat to medium heat and slow-simmer for 2 minutes to make all the ingredients slightly cooked and flavorful.

8. Finally, add a small amount of water starch to make the soup more concentrated, so that the soup wraps around the ingredients, and then add a small amount of fragrance oil before serving, stir-fry evenly, and then you can take it out.

Small Tips:
Stewed Tofu is most suitable for adding pork belly. A little fatty pork flavor will be more fragrant.
After the tofu is fried or pan-fried, not only is it delicious and easy to absorb the flavor, but it will not break easily during subsequent cooking.
Doubanjiang has a slightly spicy flavor. If you have elderly people or children at home, please choose not to add it.
