2 Cut ginger, garlic, and green onions into pieces, put them together with the bone-in pork, add 1 spoon of light soy sauce, 1/3 spoon of old soy sauce (old soy sauce is used for coloring, add a little at a time, don't add too much, or the color will be too dark), 1 spoon of oyster sauce, a little white pepper, and 2 spoons of cornstarch, mix evenly and marinate for half an hour;

Marinating the pork in this way makes the pork more flavorful and tender:When marinating the bone-in pork, you can add a little baking soda or cornstarch (tender meat), which can soften the meat and prevent it from becoming hard during the frying process. If there is sufficient time, you can cover it with plastic wrap and put it in the refrigerator on the upper layer for 4 hours. The marinated bone-in pork will be more flavorful.


3 Cut the potatoes into pieces, wash them with water to remove the starch, and soak them in water, set aside;

TIPS:

If you don't soak cut potatoes in water, the surface starch will oxidize, turn red or black, it is said that vitamin C will be lost when potatoes are soaked in water, you can drip a few drops of white vinegar to prevent loss.

4 After 30 minutes, the bone-in pork has absorbed the marinade, can be taken out and placed on a rack, try to control the moisture (to prevent splashing when frying),


5 Pour a lot of edible oil into the pot, heat the oil to 60% before pouring in the bone-in pork to deep fry for 3 minutes, this will make the golden bone-in pork come out.

How to judge the oil temperature: When the oil surface has ripples, insert a chopstick into the pot, when the bubbles around the chopsticks become dense, it means the oil temperature is right.

After frying the oil, I usually use a small hole sieve to remove the residue, wait for the oil to cool and pour it into a sealed container, and then reuse it. If it's an open mouth, the oil will become sour and change color. The oil fried multiple times cannot be reused.


6 Cook rice according to the usual amount, put it on a steamer, place the potatoes at the bottom, cover the crispy bone-in pork on top, and press the rice cooking button. When the rice is cooked, the potatoes and bone-in pork are also cooked.


During the rice cooking process, the meat juice of the bone-in pork slowly permeates and is absorbed by the potatoes, and the potatoes are also very sticky and glutinous. This method makes a whole dish with rice and vegetables, which is really delicious!
