Pork loin 250g, winter gourd one small piece, carrot one small piece, black fungus one small handful, scallion chopped one teaspoon, ginger chopped one teaspoon, garlic chopped one teaspoon, chopped chili one tablespoon, water starch as needed, cooking wine one tablespoon, vinegar two tablespoons, light soy sauce one tablespoon, white sugar one teaspoon, fragrant oil one teaspoon, salt as needed, oil as needed.

Instructions:


1. Cut the pork loin into slices, first moisten with a small amount of salt to make it sticky, then add water starch and knead it by hand until absorbed, finally add one tablespoon of edible oil and mix well for marinating.


2. Cut the winter gourd into slices and boil in a pot of boiling water for two minutes, then fish it out and cut it into strips. Cut the carrot into strips. Soak black fungus in warm water, wash it and cut it into strips. Chop scallion, ginger, and garlic into chopped pieces.

3. Mix cooking wine, vinegar, light soy sauce, white sugar, fragrant oil, and water into seasoning sauce, and prepare water starch.


4. Heat the pot, add oil and sauté the meat slices over low heat until the meat slices turn colored, then add the chopped ginger, garlic, and chopped chili to sauté, add winter gourd slices, carrot slices, and black fungus slices and sauté over high heat, then add meat slices and sauté evenly.


5. Finally add seasoning sauce, stir-fry for one minute, then pour in water starch while stirring, until the sauce reaches the desired thickness, turn off the heat, sprinkle with scallion chopped pieces and plate.
