Big Plate Beef Offal
Preparation:
1. Clean beef head, beef brisket, beef heart, beef chuck and beef tongue, then blanch in five-spice broth until cooked, remove and cool before slicing into pieces.
2. Heat oil in a wok until 40% full, add beef pieces and drain the oil.
3. Add oil to the wok and heat until hot, add chili flakes, Sichuan peppercorns, ginger and garlic to fry fragrant, then add beef pieces, stir-fry while adding spicy sauce, salt, soy sauce, a little sugar and MSG, fry fragrant and then sprinkle with celery flakes and roasted sesame seeds, stir-fry for one minute before serving.
