Red Braised Fish Head, a dish widely known and eaten.

Almost everyone has eaten it: don't worry about the hidden ambush of small fish bones, pick up the large and tender fish head meat, dip it, and savor the familiar taste. Hmm… close your eyes and you can imagine its familiar flavor.

Fish head with red braised recipe, the taste is salty and fresh, particularly everyday, but if you want to make it stand out, it's not common.

Instead, recently, I had a sudden idea to make some 'additions' to it, which rekindled my passion for red braised fish head –

» When buying fish head, it's best to ask the boss to help you open and process it clean, which is the most convenient.

Cut several knife marks on the cut fish head surface with a knife, which is convenient for later marinating.

3 spoonfuls of liquor and appropriate ginger slices, evenly smear and massage the fish head, and let it marinate for 10 minutes.

▼ 2. Prepare auxiliary materials: about 15 garlic cloves, a little ginger cut into minced ginger.

▼ 3. Sear the fish head: Use ginger to wipe the pot in advance, which can effectively prevent the fish skin from sticking to the pot, and help to remove the fishy smell and fix the shape when frying.

Pour a little more oil (about twice the amount of usual stir-fry oil) into the pot.

First, fry the garlic cloves.

When the aroma is fragrant, carefully put in the fish head (remember to dry the fish head with paper towel!), turn to medium heat, first one side to fry for about 2 minutes,

Then flip it over and fry the other side for 2 minutes, to make the fish head fried thoroughly and fragrant.

» Don't flip it frequently, otherwise it will spread the fish meat, which is not beautiful.

▼ 4. Add water to cook: Add an amount of water that is about the same height as the ingredients.

Open the fire, start seasoning and coloring: 2 spoonfuls of soy sauce, 1 spoonful of old draft, half a spoonful of sugar.

When it boils, add scallion, coriander, and simmer over low heat for 5 minutes until the fish meat is marinated.

▼ 5. Reduce the sauce and season: Before serving, add 1 spoonful of black pepper sauce and half a spoonful of oyster sauce, to make the soup flavor more rich and heavy.

Finally, open the big fire, slightly reduce the soup.

▼ 6. Serving: The fish head is immersed in the rich sauce flavored with pepper, and the sauce is full of fragrance, making it even more tempting.

The garlic cloves are softened and permeated with flavor after a long simmer. The fish head, garlic, sauce, and everything is perfect for eating rice. Now let's add rice!

Kitchen Idle Talks

Garlic's aroma can make your mouth water, but there is a small 'spell' –

After eating garlic, the garlic smell in your mouth is difficult to dissipate. It's a little embarrassing in important banquet settings. (Well, you don't need to care in front of friends and family!

▲ From the movie 'Breakfast at Tiffany's'

If you can't resist the temptation of food, here are some emergency measures I use:

1. Mouthwash. The safest way is to bring a small bottle of mouthwash with you and rinse your mouth in the restroom after eating, and refresh your lipstick.

2. Milk. The most popular garlic-removing trick on the internet, tested and proven effective. I checked the information and found that because the protein in milk will react with garlic, thus removing the garlic smell. Remember to drink it in small sips and slowly, so the effect will be better~

3. Nuts. Just like milk, utilize the high protein content of peanuts, walnuts, and almonds, chew them to remove the garlic smell.

Can you accept the taste of garlic, green onions, and coriander?
