Black Pepper Garlic Braised Fish Head

Ingredients
1 Fish Head / 2-3 heads of Garlic / 1 piece of Ginger / 1 bunch of Green Onion
Seasonings
3 spoonfuls of Liquor / 2 spoonfuls of Soy Sauce / 1 spoonful of Old Draft / 1 spoonful of Black Pepper Sauce
1/2 spoonful of Oyster Sauce / 1/2 spoonful of Sugar / A little Salt

▼ 1. Fish Head Processing: Remove the gills and scales from the fish head, tear off the dark membrane inside, and wash off the residual debris.

» When buying fish head, it's best to ask the boss to help you open and process it clean, which is the most convenient.
Cut several knife marks on the cut fish head surface with a knife, which is convenient for later marinating.
3 spoonfuls of liquor and appropriate ginger slices, evenly smear and massage the fish head, and let it marinate for 10 minutes.
▼ 2. Prepare auxiliary materials: about 15 garlic cloves, a little ginger cut into minced ginger.

▼ 3. Sear the fish head: Use ginger to wipe the pot in advance, which can effectively prevent the fish skin from sticking to the pot, and help to remove the fishy smell and fix the shape when frying.

Pour a little more oil (about twice the amount of usual stir-fry oil) into the pot.
First, fry the garlic cloves.

When the aroma is fragrant, carefully put in the fish head (remember to dry the fish head with paper towel!), turn to medium heat, first one side to fry for about 2 minutes,

Then flip it over and fry the other side for 2 minutes, to make the fish head fried thoroughly and fragrant.

Open the fire, start seasoning and coloring: 2 spoonfuls of soy sauce, 1 spoonful of old draft, half a spoonful of sugar.

When it boils, add scallion, coriander, and simmer over low heat for 5 minutes until the fish meat is marinated.

Finally, open the big fire, slightly reduce the soup.
