Ingredients: 1 cup of glutinous rice, 1 sausage, 15g onion, 6 dried shiitake mushrooms, 10g shrimp skins, 5g scallion, 5g coriander

Instructions:

1, Soak the glutinous rice in cold water for 4 hours, then steam it in a steamer with a lid for 30 minutes.

2, Soak the shiitake mushrooms and shrimp skins in cold water for 10 minutes, then wash them and soak them again in a small amount of warm water for about 30 minutes (reserve the warm water). Chop the onion, sausage, shiitake mushrooms, shrimp skins, scallion, and coriander into small pieces.

3, Heat vegetable oil and sesame oil in the pan, sauté the chopped onion until slightly browned.

4, Add the shiitake mushrooms, sausage, and shrimp skins to release their aroma.


5, Add the steamed glutinous rice and pour in a small amount of the water used to soak the shiitake mushrooms (add it in batches, don't make the rice too soft).

6, Stir-fry the rice until it's evenly cooked, then add all seasonings and chopped scallion and coriander to stir-fry until the rice has absorbed most of the moisture.

Notes:

1, Pour the water used to soak the shiitake mushrooms and shrimp skins into the rice for a more fragrant flavor. Therefore, when soaking, it's better to soak it twice, the first time don't soak it for too long, just to open it up, and pour out the water. The second time add a small amount of water and soak it again.
