Child Doesn't Want to Eat? Try This Traditional Hakka Dish – Delicious, Nutritious, and Easy to Make!

Many locals in our area love our traditional Hakka cuisine, especially dishes like Nian San Bao (Braised Three Treasures) and Salt-Roasted Chicken. Our food has many other delicious options worth trying, such as Luobo Khwa (Braised Radish), Nian Khwa (Braised Dough), and Wan Wai Gao (Rice Cake Pudding).

Today, I want to share one traditional dish with you: Hakka Old Mouse Pudding (Nian Luo Khwa). The name might sound a bit strange at first, haha. This Old Mouse Pudding isn't made with actual mice, just a local term. It's made from rice flour and cornstarch, and it tastes great. Sometimes children don't want to eat, so I make a big pot of it – it’s a simple and nutritious meal that kids really love. They always eat it bowl after bowl until they're full. By the way, it’s easy to make! If you like it, you can try it yourself.

Ingredients:10 Dried Shiitake Mushrooms, 1 Small Handful of Shrimp, 300g Rice Flour, 50g Cornstarch, 300ml Water, Vegetable Oil, Salt, Oyster Sauce, Pepper, Half a Bowl of Meat Filling, Coriander, Green Onion (Scallions), etc.

Detailed Steps:

Step 1: Prepare 10 dried shiitake mushrooms and 1 small handful of shrimp, add water to soften them. If you want to speed up the process, use hot water, which takes only a few minutes. Also prepare 300g of rice flour, 50g of cornstarch, and 300ml of water. First, pour the rice flour and cornstarch into a large bowl, then slowly add the water while stirring with a chopstick. It takes about 300ml of water, as the moisture content of the flour varies. Adjust the amount of water accordingly.

Step 2: After the flour mixture becomes a (xu zhuang - -), you can knead it by hand to form three-color dough balls – smooth, translucent, and white. Knead it until it’s smooth and glossy.

Step 3: After kneading, pinch off a piece of dough and use both palms to roll it into long, pointed strips. We call this ‘Old Mouse Pudding’. I don’t really know why it’s called this, because it doesn’t look like a mouse at all! After kneading, set aside, layering the dough balls.

Step 4: Wash and drain the softened shiitake mushrooms, then cut them into slices. Wash and drain the shrimp, then set aside. Wash and chop the coriander into small pieces, and finely chop the green onions (scallions). Add as much as you like!

Step 5: Prepare a pot, add vegetable oil and heat it up. Pour in the meat filling and quickly stir-fry until fragrant. Then add the shrimp, shiitake mushrooms, and stir-fry until fragrant again.

Step 6: After stir-frying, add appropriate amounts of salt, oyster sauce, and a little pepper, and stir-fry evenly. After stirring-frying evenly, add the appropriate amount of water – add more if you like a soupier consistency. I added about half a pot. Cover the pot and let it simmer for about 3 minutes.

Step 7: The fragrant, concentrated broth is ready. Now, put the Old Mouse Pudding into the pot and gently stir it. Cover the pot and continue to cook for another 5 minutes. Don’t stir too vigorously, as the Old Mouse Pudding is easy to break.

Step 8: Time’s up! Open the lid, sprinkle with coriander and green onions, and turn off the heat. Serve and enjoy! The flavor is exceptionally fragrant and delicious; you can smell it from far away! Even before it's cooked, the children come running over! Haha.
